Shopping list for Chicken Madras:
225 g chicken breast, 300 g green beans, 3 spring onions, 2 tomatoes, 1 onion, 1 apple, and 125 g light crème fraîche.

Preparation:
1. Cut the chicken breast into cubes. Mix the spice mix with 1 tablespoon of oil and marinate the chicken cubes in this for about 10 minutes.
2. Cut the tomatoes and apple into cubes. Roughly chop the onion and slice the spring onions into thin rings. Halve the green beans and boil them for about 5 minutes. Meanwhile, cook the rice mix in plenty of boiling water for 14 minutes until done, then drain.
3. Heat 1 tablespoon of oil in a frying pan and fry the chicken cubes until golden brown and cooked through. Add the onion and fry for about 2 minutes. Add the tomatoes and fry for another minute.
4. Then add the sauce mix and 350 ml of water, stirring constantly, and bring to a boil. Add the apple and green beans and let it simmer gently for about 2 minutes.
5. Remove the pan from the heat, stir in the crème fraîche, and sprinkle the spring onions on top. Serve the Indian Chicken Madras and the rice separately.

Tip: Replace the chicken breast with a pack of Chicken Pieces from The Vegetarian Butcher. Cut them smaller if you like. In step 3, briefly fry the Chicken Pieces until golden brown; they are already cooked. Or replace the chicken breast with 200 g canned lentils. In step 3, fry the lentils together with the vegetables.
