    Top half your tortilla with cheese, chicken and vegetables, fold in half and fry in a pan until brown on both sides!
    Like it spicy? Add pieces of jalapeño pepper to taste!

    Preparation: Recipe for 4 peopleIngredients: • 8 corn tortillas (20 cm) • 350 g minced beef • ½ tbsp oregano • 3 tsp ground cumin seeds • 2 tsp smoked paprika powder • 1 can La Morena Bayo Beans with Chipotle and Adobo (Bayo bean spread) • 2 peppers • 1 onion • 1 tbsp tomato puree • 400 g diced tomatoes • Grated cheese • La Morena Homemade style Mexican salsaPreparation method:1. Chop the onion and cut the pepper into small cubes.2. Heat 2 tbsp olive oil in a pan and fry the onion and herbs. Add the minced meat and fry until brown.3. Add the tomato puree and pepper and fry briefly. Add the tomato cubes and season with salt and pepper. Let it simmer for 10 minutes.4. Preheat the oven to 180 degrees and grease an oven dish. 5. Spread a corn tortilla with the bean spread. Place a strip of tomato sauce just below the center of the tortilla. Roll up the tortilla and place in the baking dish. Repeat with all tortillas. 6. Divide the remaining sauce over the rolled enchiladas and sprinkle with grated cheese. Place the oven dish in the oven for 15 minutes. Serve with the Mexican salsa.
