Cava is the champagne of Spain. It is made in the same way, but from different grape varieties. Only the Spanish macabeo grape has been used for this one. The bottle says 'metodo tradicional', the traditional method. That is, after the harvest, an ordinary, dry, still wine was first made, which, when it was ready, was bottled with some sugar and yeast. In the closed bottle, the wine started to ferment again, creating bubbles that, unlike in an open barrel, could not escape from the closed bottle. This dry, lively bubble with apple, pineapple and citrus is very invigorating as an aperitif and also delicious as a lunch or picnic wine.
