    Preparation: Ingredients for a basic risotto (for 4 people): 1 finely chopped onion, 2 tbsp (olive) oil, 15 g butter, 350 g arborio rice, approx. 1 l liquid (1 l vegetable stock, 100 ml wine), pepper, approx. 50 g grated Parmesan cheese1. Heat the (olive) oil in a pan and fry the finely chopped onion until it is translucent. 2. Add the arborio rice and stir. 3. Add the wine and allow to reduce completely. Then add the vegetable stock little by little and let it absorb and evaporate while stirring continuously for 18 minutes. 4. The arborio rice is ready when the outside is soft, but the inside still has a firm bite. 5. Remove the arborio rice from the heat source, stir in a knob of butter and sprinkle with Parmesan cheese. 6. Leave the dish covered for another 10 minutes. 7. Season with pepper.
