This fresh garlic from La Mancha in Spain is fermented for several weeks under controlled temperature and humidity. This gives it a nice soft texture and removes the sharpness from the garlic. It actually gives it a slightly sweeter taste that is delicious in sauces and dressings.

    Usage

    To serve: BLACK GARLIC TAHINA DIP Shopping list (2 persons) SOUQ black garlic, ½ clove of fresh garlic, ½ bunch of parsley, ½ jar of SOUQ tahina, salt.
    Finely chop the black garlic to taste. Peel and finely grate the fresh garlic. Finely chop the parsley. Stir the black and fresh garlic in a generous dash of water. Use this garlic water to loosen the tahina, stir in the parsley and some salt to taste. If the dip is too thick, add extra water.
    Delicious as a dip with raw vegetables, as a dressing for salads and on roasted vegetables, chicken and meat.
