I am the third generation butcher in my family. My parents started a butcher’s shop in 1972 in the Benoordenhout district of The Hague. With much love and passion for the craft, they built a leading butcher’s shop. The trade was instilled in us from a young age, and when I was young, I always said I wanted to become a butcher. After completing studies in another field, I still chose to follow the butcher’s training. From that moment, I was certain I wanted to succeed my parents. Haagse Berliner originally is a German liver sausage variety. This sausage is made from finely chopped meat, liver, and spices, including white pepper, cardamom, marjoram, mace, and ginger. Over the years, my father refined and adjusted the Berliner recipe, and thus the true Haagse Berliner was born.
