My name is Jeroen van der Zalm. I am the third generation butcher in my family. My parents started a butcher shop in the Benoordenhout district of The Hague in 1972. They have built a leading butcher's shop with a lot of love and passion for the craft. We were taught the trade at a young age and when I was young I always said I wanted to be a butcher. After completing a study in a different direction, I started training to become a butcher. From that moment on I knew for sure that I wanted to succeed my parents.
The Hague Berliner is originally a German liverwurst variant. This sausage is made from finely chopped meat, liver and spices, including white pepper, cardamom, marjoram, mace and ginger. Over the years, my father has further refined and adapted the Berliner recipe, and this is how the real Hague Berliner was created.
